When two cities with something to prove sit down at the same table, you get an evening worth remembering. On Monday 24th October 2023, Dublin Liberties Distillery brought the uisce beatha of Ireland's oldest distilling quarter north to Tribal Burger — one of Belfast city centre's most loved gourmet haunts — for a food pairing session that had whiskey at its heart and a burger in each hand.

A great opportunity to have some cocktails and drams form the Heart of Dublin Liberties here in the Heart of Belfast City in Tribal Burger. The popular Gourmet Burger Bar will provide the perfect back drop to a whiskey brand that is vibrant, forward thinking and full of expression. A bespoke menu from the Team at Tribal will have you satisfied and looking more! Dublin Liberties Distillery has been supporting the Festival since its conception. This year they have stepped up, with attendance at a total of 4 events in the Festival. You’ll be impressed by their range of Single Malt Whiskies, Blends, Cask Finishes and Liqueurs. Keep an eye out for their food collaborations and feel free to encourage your friends to come along. Looking Back

There's a particular kind of duchas that takes hold when a distillery commits to a festival not once, not twice, but across four events in the same week. Dublin Liberties Distillery arrived at BWW 2023 with that kind of intention. Long-standing supporters of the festival since its earliest days, they stepped up their presence this year in a way that felt less like sponsorship and more like genuine belonging. By the time Monday evening rolled around and the doors of Tribal Burger swung open at 6pm, there was already a sense that this was going to be one of the week's more characterful sessions.

Tribal Burger is the kind of place that doesn't need dressing up — the bold branding, the unapologetic commitment to gourmet fast food, and the easy energy of the room made it a natural fit for a whiskey brand that positions itself with similar confidence. Dublin Liberties Distillery takes its name from the Coombe and its surrounding streets, a part of Dublin with centuries of distilling seanchas woven through its cobblestones. Their range — spanning Single Malts, Blends, Cask Finishes, and Liqueurs — reflects a distillery that is both proud of where it comes from and genuinely curious about where it's going next. You could taste that duality in the glass.

Four drinks across the two-hour session gave attendees plenty to work through. The team moved between cocktails and drams, which kept things lively and gave those newer to whiskey an accessible way into the conversation. The bespoke food menu from the Tribal kitchen was crafted to sit alongside the spirits rather than compete with them — a thoughtful bit of collaboration that made the pairing feel cohesive rather than coincidental. This kind of food-and-whiskey dialogue was a thread running through many of BWW 2023's most memorable evenings; if you were at the Jameson session at Tribal Burger earlier in the week, you'll have seen the venue hit a similar stride with a very different dram in hand.

What stood out about the Dublin Liberties experience was the range on show. Moving from a lighter blend through to something with more wood influence — cask finishes that carry the warmth of a Dublin evening — the flight built in a way that rewarded attention. Even the liqueurs, which can sometimes feel like an afterthought on a whiskey menu, were presented here with genuine care. It was the kind of evening that converts the curious and deepens the appreciation of those who already know their way around a glass. For anyone who missed it but caught the Limavady session later in the week, Tribal Burger's collaboration with Limavady offered a different but equally well-matched Ulster contrast to the Liberties' southern character.

Sláinte to Dublin Liberties for showing up at BWW 2023 with real commitment — four events, each one pulling its weight.
