Whiskey Sensorium: Spirit Circle Session – Belfast Whiskey Week 2024
Some events at Belfast Whiskey Week ask you to taste carefully. The Whiskey Sensorium, hosted by the Spirit Circle inside the magnificent National Bank Building on 19th July 2024, asked you to do something altogether more unsettling — it asked you to think. With our friends at the Spirit Circle, take advantage of this great opportunity to test your senses, challenge your perceptions and immerse yourself in an experience like no other! We want to challenge you, we want you to open up your senses; be one with the whiskey! Well, not as deep as that, but we do want you to become aware of why you drink certain whiskies and order certain drinks. Let's have fun, be childlike again, but drink whiskey at the same time. Be prepared to be taken on a series of sensory experiments with the curious minds of our hosts (from the creators of the Famous Belfast Taste & Tour Company), across multiple levels of the historic National Bank Building, taking part in some thought provoking sessions and sipping bespoke cocktails designed for the Festival.Looking Back
There is an old idea buried deep in the duchas — the cultural inheritance — of these islands: that the things we reach for instinctively reveal something true about us. The team behind the Spirit Circle, who also run the much-loved Belfast Taste & Tour Company, built an entire evening around that proposition. Spread across multiple floors of the National Bank Building, one of Belfast city centre's grandest surviving Victorian interiors, the Whiskey Sensorium wasn't a tasting in any conventional sense. It was a guided dismantling of habit.
Attendees moved through a series of sensory experiments designed to challenge the assumptions we carry into every dram. Why do we order what we order? Why does one whiskey feel like a Tuesday evening and another like a celebration? The hosts — sharp, playful, and genuinely curious — coaxed the room into a kind of informed childlikeness. Blindfolded nosing exercises, unexpected flavour pairings, and carefully designed provocations stripped away the received wisdom and left people engaging with uisce beatha — the water of life — on its own terms. It was, in the best possible way, slightly disorienting.
Woven between the experiments were bespoke cocktails created specifically for Belfast Whiskey Week 2024, each one engineered to illustrate a point rather than simply to please. A cocktail that highlighted sweetness perception. Another that played with how aroma primes expectation before the first sip. At £35, the session offered something that no bottle on a shelf can quite replicate: the experience of being actively taught to notice. That ethos was evident in every moment of the Sensorium. The National Bank Building gave the evening a particular weight — those high ceilings and stone columns carry their own kind of seanchas, a sense of stories accumulated over generations — and the Spirit Circle team used the space well, letting its grandeur set a tone of occasion without tipping into formality. People left slightly different from how they arrived, which is about as high a compliment as you can pay an event like this.
