Some events at Belfast Whiskey Week ask you to taste whiskey. The Whiskey Sensorium, held on Wednesday 26th October 2023 at the Spirit Circle on High Street, asked something altogether more searching: why do you drink it? Returning by popular demand after turning heads at BWW 2022, this three-hour sensory experience brought together the curious minds behind the Famous Belfast Taste & Tour Company for an afternoon that was equal parts playful and genuinely illuminating.

About This Event

Having been a standout part of Belfast Whiskey Week 2022, it was a no brainer that we team up again with the guys at the Spirit Circle. We want to challenge you, we want you to open up your senses; be one with the whiskey! Well, not as deep as that, but we do want you to become aware of why you drink certain whiskies and order certain drinks. Let's have fun, be child-like again, but drink whiskey at the same time. Be prepared to be taken on a series of sensory experiments with the curious minds of our hosts (from the creators of the Famous Belfast Taste & Tour Company), across multiple levels of the historic National Bank Building, taking part in some thought provoking sessions and sipping bespoke cocktails designed for the Festival. Looking Back

There's a question most whiskey drinkers have never properly sat with. You know what you like — the peaty dram on a wet November evening, the honeyed drop at a wedding, the blended comfort of something familiar — but the why behind those preferences often goes unexamined. The Whiskey Sensorium set out to change that, and it did so with characteristic Belfast wit: not by lecturing, but by making you feel like a child who'd just been handed the keys to a very well-stocked laboratory.

Spread across multiple levels of the Spirit Circle's home in the historic National Bank Building on High Street, the afternoon unfolded as a series of sensory experiments that nudged participants to pay closer attention to how their senses — sight, smell, touch, memory — shape what ends up in their glass. The Spirit Circle is a specialist whiskey venue that takes education seriously without ever letting it become solemn, and that ethos was woven through every moment of the event. Hosts guided groups through thought-provoking sessions that drew on the seanchas of the senses: the stories we carry in our noses and on our palates long before we ever learned the word 'terroir'.

Four bespoke cocktails, designed specifically for Belfast Whiskey Week 2023, punctuated the journey. These weren't afterthoughts — each drink was crafted to anchor a particular sensory exercise, giving participants something to hold, smell, sip and consider in the context of whatever had just been explored. The pairing of conceptual inquiry with actual uisce beatha in hand kept the afternoon grounded and, frankly, great fun. The playfulness was deliberate and it worked; there was laughter in the room, and the kind of animated conversation that only happens when people are genuinely surprised by what they've just discovered about themselves.

This was one of the most popular recurring sessions across the whole of the Sensorium's Wednesday and Thursday run, and it's easy to see why. The format rewards curiosity over prior knowledge, which means seasoned collectors and first-time festival-goers found themselves on equal footing — united by the shared novelty of approaching whiskey from the inside out. If you missed this timeslot, other sessions ran across the week with the same warmth and rigour, each one selling out in its own right.

At £40 for three hours, four drinks, and a genuine shift in how you think about what's in your glass, the Whiskey Sensorium represented some of the finest value Belfast Whiskey Week 2023 had to offer. It was the kind of session that stays with you — not because of what you drank, but because of what you understood by the time you walked back out onto High Street.
