Some events at Belfast Whiskey Week ask you to taste whiskey. The Whiskey Sensorium — returned by popular demand for BWW2023 — asked something altogether more searching: why do you drink it? Hosted by the curious and playful minds behind the Famous Belfast Taste & Tour Company at their home in Spirit Circle on High Street, this three-hour sensory odyssey unfolded across multiple levels of the magnificent National Bank Building, weaving together thought-provoking experiments, bespoke festival cocktails, and the kind of honest self-reflection that whiskey, at its best, tends to provoke.

About This Event

Having been a standout part of Belfast Whiskey Week 2022, it was a no brainer that we team up again with the guys at the Spirit Circle. We want to challenge you, we want you to open up your senses; be one with the whiskey! Well, not as deep as that, but we do want you to become aware of why you drink certain whiskies and order certain drinks. Let's have fun, be child-like again, but drink whiskey at the same time. Be prepared to be taken on a series of sensory experiments with the curious minds of our hosts (from the creators of the Famous Belfast Taste & Tour Company), across multiple levels of the historic National Bank Building, taking part in some thought provoking sessions and sipping bespoke cocktails designed for the Festival. Looking Back

There is a word in Irish — duchas — that speaks to an instinct, an inherited belonging, something felt before it is understood. It is perhaps the most fitting word for what the Whiskey Sensorium set out to excavate. Not the technical vocabulary of angels' shares and congeners, but the deeper, more personal pull that draws a hand toward a particular glass on a particular evening. The event returned in 2023 having been one of the standout moments of Belfast Whiskey Week 2022, and it arrived with its ambitions sharpened and its programming refined. Ticket holders gathering on the Thursday afternoon timeslot knew, by reputation at least, that they were in for something a little different.

Spirit Circle is a specialist whiskey venue that brings genuine educational rigour to the uisce beatha — the water of life — without ever letting pedagogy crowd out pleasure. Situated in the historic National Bank Building on High Street in the heart of Belfast city centre, the venue lends itself beautifully to an event of this kind. Its layered architecture — multiple floors, distinct atmospheres, the sense of moving through a building that has witnessed the full sweep of this city's story — became part of the experience itself. Guests moved between sessions as if travelling through different chambers of memory, each one designed to tease open a different sensory register.

The hosts — from the Famous Belfast Taste & Tour Company — brought a lightness of touch that prevented things from ever feeling like a lecture. There was a deliberate, almost mischievous invitation to be child-like again: to approach smell, taste, texture, and association without the self-consciousness that experience can sometimes impose. Participants found themselves engaged in sensory experiments that reframed familiar whiskies as prompts rather than products — each sip a question as much as an answer. The four bespoke cocktails developed specially for the festival arrived at carefully considered moments, each one designed not simply to delight the palate but to advance the session's central inquiry. It was the seanchas of whiskey — the storytelling tradition — translated into something you could hold in a glass.

That this was one of the most-ticketed recurring events of BWW2023 speaks for itself. The Sensorium ran across multiple timeslots throughout the festival week, a testament to the demand it generated — if you missed this particular Thursday session, other timeslots were available across the week, and the full run of Whiskey Sensorium sessions gave hundreds of attendees the chance to sit with that fundamental question. For those who did take their seats in the National Bank Building on that Thursday afternoon, the three hours passed in the way that only the best festival experiences allow — swiftly, warmly, and with something worth carrying home beyond the taste on the tongue.

Sláinte to Spirit Circle, to the Taste & Tour team, and to every participant who arrived willing to be surprised. The Whiskey Sensorium reminded us that the most interesting journey in whiskey is not necessarily from grain to glass — it is from glass to self.
