Some events ask you to taste whiskey. The Whiskey Sensorium asked you to understand it. Returning to Belfast Whiskey Week 2023 after turning heads in 2022, this three-hour sensory experience at the Spirit Circle on High Street invited guests to strip back their assumptions and ask themselves a deceptively simple question: Why do I drink whiskey? It was, in the best possible way, a class you never knew you needed.

About This Event

Having been a standout part of Belfast Whiskey Week 2022, it was a no brainer that we team up again with the guys at the Spirit Circle. We want to challenge you, we want you to open up your senses; be one with the whiskey! Well, not as deep as that, but we do want you to become aware of why you drink certain whiskies and order certain drinks. Let's have fun, be child-like again, but drink whiskey at the same time. Be prepared to be taken on a series of sensory experiments with the curious minds of our hosts (from the creators of the Famous Belfast Taste & Tour Company), across multiple levels of the historic National Bank Building, taking part in some thought provoking sessions and sipping bespoke cocktails designed for the Festival. There's a word in Irish — duchas — that speaks to an instinctive belonging, a pull toward something that feels innately yours. For many who passed through the doors of the National Bank Building on that Friday afternoon in October 2023, the Whiskey Sensorium came close to putting a name on that feeling. Hosted by the curious minds behind the Famous Belfast Taste & Tour Company and staged across multiple levels of the Spirit Circle's magnificent surroundings, the event was less tasting masterclass and more guided self-discovery — whiskey as a lens for understanding your own senses.

The format was unlike anything else in the festival programme. Across three hours, guests moved through a series of thought-provoking sensory experiments — exercises rooted in psychology, memory and perception — that gently dismantled the idea that whiskey appreciation is purely about what's in the glass. Hosts encouraged a kind of deliberate playfulness, a return to child-like curiosity, asking participants to notice what they noticed: not just flavour, but emotion, association, instinct. Why this whiskey? Why now? The sessions were punctuated by four bespoke cocktails designed specifically for the festival, each one crafted to complement and challenge the sensory work being done around them.

The Spirit Circle is a specialist whiskey venue that takes its educational mission seriously, and that ethos was everywhere in the room. The setting helped enormously — the historic National Bank Building on High Street carries a weight of seanchas, of layered Belfast story, that seemed entirely fitting for an event asking people to dig into their own personal histories with uisce beatha. Moving between its levels felt theatrical, almost ritualistic, each space offering a different register of the afternoon's exploration. It was the kind of venue that makes Belfast feel like exactly the right city in which to hold a whiskey festival. What set the Sensorium apart — and what made it a natural returning act from 2022 — was its refusal to be precious. There was laughter. There was genuine surprise. The cocktails were accomplished without being showy, and the hosts wore their expertise lightly, which is harder than it looks. This wasn't a session for the initiated only; it was one of those rare festival events that works equally well for a seasoned collector and someone who simply enjoys a good dram on a Friday afternoon.
