Some events at Belfast Whiskey Week ask you to sit back, sip, and listen. The Whiskey Sensorium asked something altogether more interesting: it asked you to think. Returning for BWW 2023 after turning heads the previous year, this three-hour sensory experience — crafted by the curious minds behind the Famous Belfast Taste & Tour Company and hosted across the storied floors of The National — challenged attendees not just to drink whiskey, but to understand why they drink it at all.

About This Event

Having been a standout part of Belfast Whiskey Week 2022, it was a no brainier that we team up again with the guys at the Spirit Circle. We want to challenge you, we want you to open up your senses; be one with the whiskey! Well, not as deep as that, but we do want you to become aware of why you drink certain whiskies and order certain drinks. Let's have fun, be child-like again, but drink whiskey at the same time. Be prepared to be taken on a series of sensory experiments with the curious minds of our hosts (from the creators of the Famous Belfast Taste & Tour Company), across multiple levels of the historic National Bank Building, taking part in some thought provoking sessions and sipping bespoke cocktails designed for the Festival. Looking Back

There's a question at the heart of every dram poured in this city, one that rarely gets asked aloud: why this whiskey? Not which distillery, not which age statement — but why, on a sensory and almost instinctive level, certain whiskies call to us and others don't. The Whiskey Sensorium was built around that question, and on a Sunday afternoon in October 2023, it drew a crowd of curious souls into the grand interior of the National Bank Building on Belfast city centre to find out.

The Spirit Circle — a specialist whiskey venue with a genuine gift for educational experience — brought its characteristic blend of rigour and playfulness to the afternoon. Participants weren't talked at; they were led, gently and sometimes mischievously, through a series of sensory experiments that peeled back the layers of habit and assumption most of us carry into a whiskey glass. The format spread across multiple levels of the National, which lent the experience a sense of discovery — each floor a new chapter, a new provocation. There was something almost theatrical about it, in the best possible sense.

Four bespoke cocktails, designed specifically for the festival, anchored the afternoon. These weren't afterthoughts or palate-cleansers; each one had been conceived to illuminate a particular sensory point the hosts were making. They worked. Sipping something crafted with intention, in a room full of people genuinely interrogating their own reactions, has a way of sharpening the experience considerably. The conversation — between attendees, between guests and hosts, between the whiskey and the senses — was the real thing being poured. This was one of several timeslots the Sensorium ran across the festival, testament to how much appetite there was for this kind of thoughtful engagement.

What the Spirit Circle does particularly well is resist the urge to make whiskey feel intimidating. The duchas of good whiskey culture — the generosity, the shared wonder, the willingness to say 'I don't know, let's find out together' — was present throughout. Attendees were encouraged to be child-like in their curiosity, to set aside received opinion and simply pay attention. That's harder than it sounds, and the hosts made it feel like a game rather than a test. By the end of the three hours, more than a few people left with a genuinely different understanding of their own palate.

The Whiskey Sensorium earned its return from 2022, and its multiple sold-out timeslots in 2023 confirmed it as one of the week's most distinctive offerings.
