A late-night switch of spirits. When Monday night rolls in, we trade the whiskey glass for rum at The Spaniard — the Cathedral Quarter’s legendary rum den on Skipper Street, where more than fifty rums line the shelves of one gloriously cluttered little bar.

This is a guided tasting with a first in it: rums from Ireland and the Caribbean, poured side by side — the first tasting of its kind in Belfast. Ireland was once awash with rum through its ports and its sailors, and a new generation of Irish producers is picking the thread back up. You’ll taste where the story started and where it’s going.

Then the revelry: rum cocktails from bartenders who mix some of the best in the city, in a room built for late nights. Whiskey will forgive you. Just this once.
