Some events arrive with a quiet confidence that needs no fanfare — Is 30 Old?, the 2025 collaboration between Belfast Whiskey Week and ROAM, was precisely that kind of evening. Held on a warm July night at one of Belfast city centre's most coveted dining destinations, this fine dining and specialist tasting brought together some of the oldest, most storied whiskies in the festival's programme, paired with the kitchen's signature precision and flair. Fifty guests sat down to a meal that was, in every sense, a reckoning with time.

With one of Belfast’s most sought after fine-dining restaurants being in such demand, we are humbled by the number of events we have collaborated with over the past few years. 

Diner @Roam is an integral within Belfast Whiskey Week and this year will prove, no doubt again that the exceptional whiskey and exquisite food will go down a treat. 

All whiskies will be 30 years old or older. Don’t complain!

Looking Back

ROAM has become something of a fixed star in the Belfast Whiskey Week constellation. Over several years of collaboration, the multi-concept venue has earned its place not merely as a backdrop for whiskey events, but as an active creative partner — a place where the duchas of hospitality runs genuinely deep. The team there understand that a great whiskey tasting is not simply a sequence of pours; it is a conversation between spirit and sustenance, between the patience required to make something worth waiting for and the skill required to serve it well. That understanding shaped every element of this evening.

The central conceit of the night — every whiskey on the table aged thirty years or older — was one of those ideas that sounds simple until you consider what it actually means. Thirty years in wood is not just maturation; it is transformation. The new-make spirit that entered those casks has long since ceased to exist, replaced by something that carries the memory of grain and distillery character but has been remade entirely by time, by the slow exchange between liquid and oak, by the particular character of the warehouses where those casks rested. Sipping through the evening's line-up, guests were not merely tasting whiskey — they were tasting duration itself, the seanchas of decades laid quietly into glass.

The food, as ever at ROAM, was more than a supporting act. At £50 a head, Is 30 Old? represented something close to the platonic ideal of a festival fine dining event — substantial enough in its ambition to justify the price, intimate enough in its execution to feel genuinely special. ROAM remains, without question, one of the great collaborators in Belfast Whiskey Week's history, and this night was another strong chapter in that ongoing story.
